No one says that the early hours are primo decision making time – the grogginess of sleep still with you, you stare at the fridge hoping something, anything (edible) will jump out at you.
Here are some go-to’s of mine, that hopefully will brighten your morning with some quick and easy choices. Every since I stopped eating meat at age 16, I’ve had my ear tuned towards health conscious eating. The following foodie options are labelled gluten free, dairy free, and meat-free if that’s your thing.
Passionfruit Blueberry Smoothie
Platanos maduros, vegan sausages, and starch
Coconut Smoothie Bowl
Passionfruit Blueberry Smoothie
Ingredients
- 1 cup plain fat-free yogurt
- 1/2 cup passion fruit nectar
- 1/2 cup ice cubes
- 1 1/2 teaspoons toasted wheat germ
- 2 teaspoons honey
- 1 (12-ounce) bag frozen blueberries
- 1 ripe banana, cut into 4 pieces
Combine in blender, ordering frozen ingredients near top to allow ease in blender.
Platanos maduros, vegan sausages, and starch
Platanos maduros can be bought as a whole fruit in the produce section of most small chain and international grocery stores, or can be found in the frozen food aisle, already peeled and cut into slices.
Ingredients
2/3 cup vegetable oil, enough to cover the slices
Heat the oil to medium hot, fry briefly. A minute or two each side , reduce to low, and turn until caramelized.
Vegan Sausages, or the Morningstar or Boca brands, can be cooked a variety of ways, whether pan fried on both sides or popped in a toaster oven. Wait until they feel crispy and heated through.
Starch of your choice
I prefer to pan fry some hashbrowns, which can be bought prepackaged shaped into patties or loose. If you are not gluten free, sourdough toast or your preference.
